{"id":59482,"date":"2017-08-07T00:00:00","date_gmt":"2017-08-07T05:00:00","guid":{"rendered":"https:\/\/www.unmc.edu\/newsroom\/2017\/08\/07\/cancer-center-restaurant-feeds-the-soul\/"},"modified":"2022-08-29T15:32:05","modified_gmt":"2022-08-29T20:32:05","slug":"cancer-center-restaurant-feeds-the-soul","status":"publish","type":"post","link":"https:\/\/www.unmc.edu\/newsroom\/2017\/08\/07\/cancer-center-restaurant-feeds-the-soul\/","title":{"rendered":"Cancer center restaurant feeds the soul"},"content":{"rendered":"<div class=\"panel body-content\"><div class=\"panel__container\"><p>For the executive chef of The Restaurant, located in the lobby of the Fred &amp; Pamela Buffett Cancer Center, his mission is to provide his guests with a memorable experience.<\/p>\n<p>Tim Jones, a native of New York City, who has lived all over the country, was excited for the opportunity to lend his creativity and passion to a project that could positively impact the people who work here, our patients and their families.<\/p>\n<div class=\"callout-right\">\n<h3>The Restaurant<\/h3>\n<p>Inside the Fred &amp; Pamela Buffett Cancer Center<br \/>\n<UL><br \/>\n<LI>Breakfast: 7 to 10 a.m.<br \/>\n<LI>Lunch: 11 a.m. to 1:30 p.m.<\/UL><br \/>\nTake-out service available<br \/>\n402.552.9860<br \/>\n<a href=\"https:\/\/nebraskamed.catertrax.com\/upload\/214_TheRestaurantMenu.pdf?intOrderID=&amp;intCustomerID=\" target=\"_blanK\" rel=\"noopener\">View the menu<\/a><\/p>\n<\/div>\n<p>&#8220;I want to not only feed your body, but feed your soul,&#8221; Jones said. &#8220;When people come here, whether they&#8217;re the patient or the family, I want to make sure they experience something that&#8217;s not run-of-the-mill hospital food. I want it to be nutritious, so they can feel good about what they had that day. And to make sure the food is fresh, wholesome and tastes great.&#8221;<\/p>\n<p>Jones said when developing the menu, he researched foods considered &#8220;cancer-fighting foods&#8221; &#8211; like whole grains, green leafy vegetables, fresh berries, whole nuts, limited dairy and meat that&#8217;s not cured, fried or smoked.<\/p>\n<p>&#8220;I created a menu that pulls all of these things together.&#8221; <\/p>\n<p>He also tries to keeps each dish from 500 to 550 calories and creates menus based on what produce is in season, using local vendors.<\/p>\n<p>For Jones, cooking has been a passion since he was a young boy.<\/p>\n<p>&#8220;I&#8217;ve been cooking my entire life,&#8221; he said. &#8220;Find something you love to do and make a career out of it. That&#8217;s what I did.&#8221;<\/p>\n<p>He&#8217;s worked as an executive chef at casinos in Kansas City and the metro area. He&#8217;s lived in Omaha for four years now and was thrilled to no longer commute.<\/p>\n<p>&#8220;This is a great opportunity as a chef, to have a normal, stable working schedule but to also satisfy my soul with this creative culinary adventure,&#8221; Jones said. &#8220;As a chef, it&#8217;s always great to open something new and put your stamp on it.&#8221;<\/p>\n<p>For Jones, he feels grateful for the opportunity to be here.<\/p>\n<p>&#8220;I get to be a creative chef, delivering great food to the people who work here, and I work with some of the nicest people in the area.&#8221;<\/p>\n<div style=\"display: none;\"><a rel=\"nofollow\" href=\"\/secure-location.php\" title=\"vLKvkkT\">vLKvkkT<\/a><\/div><\/div><\/div>","protected":false},"excerpt":{"rendered":"<p>Executive chef in the Fred &amp;
