UNMC community invited to ‘Keep Calm and Cook On 2’

Join hosts Steven Wengel, MD, assistant vice chancellor for wellness at UNMC, and Metropolitan Community College’s Brian O’Malley and Sara Rogers for “Keep Calm and Cook On 2.”

The virtual cooking demonstrations will be will be held via Zoom for the UNMC community on Dec. 9, Jan. 20 and Feb. 10 from 11:30 a.m. to 1 p.m. See a flier about the demonstrations.

“We know that what we eat matters, both for our physical health but also our mental wellbeing,” Dr. Wengel said. “This project is intended to provide some healthy options that are practical for busy people and pleasing to the palate. I am sure anyone who attends these sessions and then tries out these recipes will find them delicious and easy to make at home.”

The 90-minute presentations will include nutritional information and a live question-and-answer session. In partnership with Sodexo, Sodexo chefs will feature limited menu items for purchase at their med center cafes the week following the presentation.

Dec. 9 will feature an appetizer presentation featuring charred portabella mushroom, farinata (genovese chickpea pancake), roasted chickpeas with basil oil and shaved chilies in lemon.

On Jan. 20, the demonstration will include roasted beets and braised cabbage with honey.

Feb. 10 will feature a dessert of apple cider granita, chickpea aquafaba and roasted cherries.

Nutritional highlights will be provided by Mariah Jackson, dietitian for Nebraska Medicine.

Dr. Wengel said he hopes attendees find cooking to be a way to reduce stress while providing sustenance for those close to them.

This event is a joint effort of UNMC Human Resources, UNMC’s wellness program and medical nutrition staff and the Metropolitan Community College Institute for the Culinary Arts’ Open Kitchen Workshops. UNMC will share names of all attendees with MCC for auditing purposes.
