Learn to make ‘cowgirl caviar’ at Farmer’s Market

Tamara Rager, UNMC human resources, will demonstrate how to prepare Cowgirl Caviar using whole food plant-based with no oil, salt or refined sugars when today’s UNMC’s Farmer’s Market opens at 11:30 a.m. at the UNMC Ice Rink on the Ruth and Bill Scott Student Plaza.

Tomatoes and corn will be among the fresh produce featured at the market, open until 1 p.m. in the ice rink.

More than 40 varieties of vegetables are offered — by the piece or by the bushel — by Wenninghoff’s Farm, owned and operated by an Omaha family for more than 50 years. Recipes for various vegetables also are available on the Wenninghoff Farm website. Cash is preferred; credit cards are accepted with a $1 surcharge.

The market is open every Tuesday through Aug. 6 and is sponsored by the UNMC College of Public Health Wellness Council. In the event of rain, the market will be cancelled.
